Ingredients:
4-5 medium sized potatoes (red, russet, or yukon gold)
4 T olive oil, divided
1 recipe dry onion soup mix (see
above)
Directions:
Heat oven to 400°. Cube potatoes and place in a plastic
ziplock-type bag. Pour on 3 T olive oil and
onion soup mix and shake until potatoes are coated. Coat a cookie sheet with remaining oil and heat for 2 minutes in the hot oven. This will prevent potatoes from sticking to the pan. Put potatoes on cookie sheet, spread evenly, and bake until fork tender, about 20-25 minutes.
